I wish I could be an extreme couponers that gets a week’s worth of groceries for my family for like $17, but alas, I am not. I am also not one of the crunchy mom’s who only feed their children granola and organic veggies. Not that I’m against either of those things but somedays I don’t have time for all that. Somedays we just need something cheap, easy and delicious.
I’ll preface this to say you’ll rarely see a recipe on Our Maybe Baby. I’m not known for my cooking expertise but this recipe is pretty much impossible to mess up and is toddler approved.
Enter one of my favorite go-to receipes from college. Mini Pizzas!
1 can of 10 refrigerator biscuits
1 jar of pizza sauce
Shredded mozzarella cheese
30 pepperonis (or whatever other toppings you’d like to add)
The first thing I do is preheat the oven to 400 degrees. Then I spray a large baking sheet with the cooking spray. Stretch/smash each biscuit onto the baking sheet, leave a little room around each one for them to expand as they cook. Put a spoonful of pizza sauce on each biscuit and spread with the back of the spoon. Sprinkle with mozzarella cheese and top each mini pizza with 3 pepperonis (or your preferred toppings). Bake for 9-10 minutes.
